A warm freshly baked samosa stuffed with a savory mixture of sweet potatoes, peas and red potatoes is the ultimate comfort food for me. It conjures up memories of me as a child walking down the street to a “sweet and snack shop ” where I would watch as freshly stuffed samosas were fried in a huge cauldron of oil and eaten piping hot by the people who bought them. I would usually eat one right there while it was hot and then take the rest home. This was in Bangalore India where I grew up. When my Sunday Supper team decided to do a ” Comfort Food Theme” I immediately thought of samosas . A samosa is like a calzone and you can be very creative stuffing it. Well, here in the States they still continue to be my favorite comfort food and I usually get some pretty good ones from an Indian restaurant . When I was pregnant, I craved them and my poor husband was rushing to the store every time the craving hit ! Now I’ve figured out how to make a healthier version by baking it instead of frying and it tastes better. I also used a combo of sweet potatoes and potatoes and this raised the nutritional value and gave it more character. The stuffing must be a little spiced, so I added some mustard seeds, onion, cumin, grated ginger and chili to the sweet potato mix ! They came out crisp and fresh from the oven and it took self-control to take some pictures before devouring them. You can eat them plain, but I like to dip them in a tangy date ginger dip which makes it a sweet and savory treat ! They also go pretty well with this mint cilantro dip !
Nutrition Wise !
Baked samosas are a good source of fiber if you use whole grain dough. Sweet potatoes and potatoes add to the fiber and give a healthy dose of Vitamin A & C. Peas are bursting with flavor, fiber and antioxidants ! So much goodness in a samosa !!
Making the samosas
Knead dough. Make small balls the size of a lemon, roll them out and cut using a calzone press. Then stuff the mixture into half of the press and close to get a nice samosa. If you don’t have a calzone press, just make lime size balls of dough and roll to form a circle. Stuff one side of the circle with filling, close the circle and seal with some water. It will work just as fine ! If you do it manually you can control the size of the samosa. When you use a calzone press they come out pretty large.
Short cut method !
Since I am following the October Unprocessed Challenge I made my own dough with a mix of oats and whole grain wheat flour. You can also use pizza dough, pastry dough, wanton wraps or puff pastry sheets. It has quite a different taste with the puff pastry.
Samosas Stuffed With Sweet Potatoes & Peas

Ingredients
- 2 sweet Potaoes
- 2 Large potatoes
- 1 cup peas
- 1 teaspoon chili flakes
- 1 onion (chopped fine)
- 1 teaspoon ginger (grated)
- 1 teaspoon cumin powder
- 1 teaspoon mustard seeds
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 2 cups whole wheat flour
- 2 cups oat flour
Note
If you do not want to make your own dough, use your favorite pastry dough, pizza dough, puff pastry or pie crust.
Directions
Bake or boil potatoes and sweet potatoes. Scoop out flesh. | |
Heat oil. Add mustard seed and wait for them to splutter. Saute finely chopped onion, ginger, chili flakes and cumin for about 2-3 minutes. | |
Add potato, sweet potato to the above mixture and fold in. Add peas and salt. Remove from fire. | |
Mix 2 cups oat flour with 2 cups wheat flour with warm water and knead till it forms a firm dough. knead about 10 minutes and refrigerate for a few hours or overnight. This will help the gluten to form and make it easy to roll. | |
Roll flour into 1/8 inch thickness and use a calzone press to cut circles. You can also make lime size balls and roll each ball into a circle. | |
Stuff a scoop of mixture into one half on the circle and bring the other half over and seal using water. Use a fork and make a nice edge. | |
Bake at 400 degrees for 15 minutes till golden brown | |
Enjoy warm with your favorite dip. |
