Coronavirus times, and life as we now know it, is the new normal. While a lot of folks are out there saving lives, some of us are home, relaxing, bonding with family, while trying to work from home and adapt to new job descriptions. My job has changed too. Though I do miss the face to face meetings with clients and workshops, I now get to do some of this virtually. On request from one of my clients, for some easy cooking videos with foods you have lying around your pantry, I got thinking. I love to talk shop and enjoy workshops, food demos with groups of people – there’s nothing to equal the rush of adrenaline, every time I get to talk nutrition. But talking in front of a live audience and talking into a video camera are two different, though fun things. I am way more comfortable, perhaps too comfortable in front of people but like everybody else I am stepping out of my comfort zone and rising to the occasion. So video it is.
For my first recipe I thought of rustling up a hearty chicken soup. Now chicken soup to me is one of those dishes I can make with literally any veggies I have lying around, and it still tastes fabulous. It is also comfort food and perfect for any season. I don’t want to talk too much about the soup here because I want you to see the video, but I talked a little about the bare bones of soup aka broth or how to make a good broth with a whole chicken. My biggest challenge was fitting everything I wanted to say about chicken soup into 4 minutes. Anyway, my first cooking video – it went out to families Wednesday, and they loved it. So here’s my take on “Wholesome Chicken Soup for your soul”. Do add your own spin to it and make some healing, wholesome, nutritious, robust chicken soup!
On a personal note I was thinking about how coronavirus has swept into our worlds changing life in a way that nothing will ever be the same again. I have had one dear friend die, some of my friends have loved ones who have passed away, some of my extended family and friends have been touched by the virus and yeah, it is sad and heart breaking. But in and through all this sorrow and turmoil there is also this strength and beauty that has emerged People reaching out, helping strangers. Brave health care workers, front line folk bringing us our groceries, workers in risky places toiling without a complaint. Everyone doing a part whether its staying at home so others can be safe or doing whatever it is they can to help. When this is all over we will look back and see how strong this has made us and like they say “This too will pass”! In the meantime I want to do my part to help people, enjoy all this extra time with family and not take life for granted. Thanks for stopping by and stay safe everyone. Love xo
