Cauliflower rice loaded with peanuts, tinged with pepper, garlic and tossed in caramelized onions and topped with fresh basil. We ( my husband and I)are eating low carb these days at least untill thanksgiving and cauliflower rice is a great way to eat rice without getting rice carbs. Growing up in India, rice was a staple and I have eaten rice prepared so many ways: lemon rice, mango rice, sambar rice, yogurt rice, biryani, fried rice, rice pudding … you name it. I can eat low carb for the most part but after some time, I must have some rice with yogurt or biryani because its our comfort food. I grew up on it and just the smell of rice cooking can make me feel warm and gooey inside. I have experimented with cauliflower rice and have created a few actually edible tasty concoctions,but this is my favorite one yet. The bold flavor of caramelized onion mingles with the subtle flavor of basil to give this rice its unique flavor. It has almost as much peanuts in it as the cauliflower rice making it a high protein dish that is Its pretty easy to whip up. Sauté onions nice and brown, add peanuts, cumin, pepper, fresh garlic some chili flakes and then throw the cauliflower rice in, cook it a little and add some fresh chopped basil. I used frozen cauliflower rice for this recipe, but you can also use fresh riced cauliflower for this dish. You can eat the rice plain and it is quite satisfying as a main dish thanks to the peanuts or you can eat it with some curry poured over it!
How to make cauliflower rice: Take a fresh head of cauliflower. Manually grate into a couscous kind of consistency. You can also use a food processor. If you want to rice an entire cauliflower, you can freeze portions of it for later use. It freezes well. You can also buy riced cauliflower at major grocery stores. You can find it in the frozen section and fresh produce section.
Nutrition Wise : Cauliflower is a high fiber vegetable that is packed with vitamin k, omega 3 and has anti-inflammatory properties. Peanuts are good source of protein & healthy fats and all the pepper and garlic mixed in adds some extra anti-inflammatory punch.

Ingredients
- 2 Cups riced cauliflower
- 1 Large onion (sliced)
- 1 Tbsp olive oil
- 1 Tsp chili flakes
- 1 Tsp fresh crackled pepper
- 1 Tsp cumin powder
- 1 Tsp salt
- 1 cup raw shelled peanuts
- 1/2 cup chopped basil
- 4 -5 Cloves garlic finely chopped
Directions
saute onion in olive oil till translucent and brown | |
Add garlic, chilli flakes, spices and saute for about 2 minutes | |
Add peanuts and saute another 3 minutes | |
Add cauliflower rice and saute another 5 to 7 minutes till its cooked to taste | |
Add chopped basil in the last 2 minutes and mix in well |
On a personal note my life has been one emotional roller coaster the last couple of days and I feel the need to cathartically write here. If you don’t want to read about my life you should just read my recipe and glide on by. My good friend lost her husband 2 weeks back to a short, sudden but swift battle with cancer. A little more than two weeks from diagnosis to death. Sitting at the funeral, listening to his children (both are around my kid’s ages) share memories of their dad, like everyone else I bawled my eyes out. It was heartbreaking! Times like these serve to remind me how fleeting life can be and how this could happen to anyone. In a blink of an eye you could lose your family and friends. Tomorrow is not promised to anyone. Life is precious and moments of anger, regret, pain are meant to be experienced but should be skimmed over quickly to give room for gladness, joy, peace, forgiveness and love. Easier said than done but I am consciously trying to embrace everything in my life with positivity, love and treat life as the gift that it is. Let go of stuff I can’t understand or control and enjoy that freedom that comes with letting go. Love my family, friends and people too for just what they are. Do whatever sparks your joy often. For me having my family of four under the same roof sparks my joy. After my oldest went off to college times like these are rare and I cherish them. Going for walks on beautiful trails with music in my ears, hitting the gym, cooking for family and friends, hanging with friends are just some of the things that spark my joy. When I am feeling low, I will think of my favorite space …the beach : Waves rushing around my feet, walking in the sand, breathing in sea air I will love what I have and be thankful for life. I may sound like Ms. Positivity here, but I assure you I am not always positive. Like everyone I have my dark moments and times of despair, but I will not let them overshadow the good in my life.
