Savory beef cutlets crisp on the outside and super soft on the inside. These air fried babies have all the crunch of a fried cutlet minus the fat. My latest kitchen gadget craze is the air fryer and don’t even get me started on all that I make in the air fryer because my list is long. Cutlets are a regular in my home. I make tuna, turkey, pork, beef cutlets and ever since I started air frying them it’s so much easier to make and healthier too.
Beef cutlets bring back fond memories for me. My mom is a gourmet cook ( people say I take after her but she’s the queen) In our large dining room cum kitchen in Bangalore, India, my mom would sauté some ground beef in a large saucepan with some salt and chopped onion till it dried out. Then she would add some pressure-cooked potatoes, some chopped ginger, garlic, cilantro, mint, green chilli and form patties which would then get dipped in egg, rolled in breadcrumbs and fried in a huge tawa of boiling oil. She would remove them with a slotted spoon and place them on newspaper to drain the oil and I swear those cutlets would disappear as soon they were placed on the plate. Now when I make my own cutlets with only half the ingredients that she used I wonder how her patties did not fall apart. If I use too many ingredients mine fall apart which is why I stick to a few basic ingredients. One day though, I would like to be able to add all the ingredients I want and not have these patties fall apart. The huge dinning table that we ate on was also the table my zoologist dad used (don’t hurl) for frog, cockroach and mice dissection with his students. I have vivid memories of watching my professor dad coach his students as they used their instruments to poke and prod the amphibians, all very gooey and messy. Of yeah, we always lined the table with newspaper before they used it and cleaned up good after they were done. All very hygienic, I assure you. I should probably stop here, or I can go on and on when I take a trip down memory lane.
So anyways, back to my recipe: I microwave the meat till it is half cooked and I use a paper towel to drain the excess moisture. Then, I mix in some air fried potato with some chopped parsley, ginger and garlic. I add some pepper, chili flakes and salt. I would love to add onion and green chill and more herbs like mom does but the experience of having my cutlets break up when I add more make me a little cautious. These herbs seem to work well, and I end up with firm cutlets that I am comfortable with. I used to roll these in breadcrumbs (panko), but I recently switched to almond flour since my husband has become gluten free. Sometimes, like this time (force of habit) I roll out the panko and then stop and remember to use the almond flour instead. I guess old habits are hard to break but when you make a change that is a good one for those around you, stick to it, I guess. I air fried the cutlets for 7 minutes on each side at 370 and then for 3 minutes at 400 to get it all crisp. Airfryer Beef Cutlets
Ingredients
- 1lb ground beef
- 3 Large potatoes
- 1/2 " ginger (finely chopped)
- 4 Cloves garlic (chopped)
- 1/2 cup parsey (chopped)
- 1 Tsp chili flakes
- 1 Tsp pepper
- 1 cup almond flour
- 2 Eggs beaten
- 1 Tsp salt
Directions
Finely chop garlic, ginger and parsley | |
Microwave beef for 5 -7 minutes till half cooked. Use a paper towel and mop up extra liquid | |
Prick 3 potatoes with a fork and air fry for 6 minutes at 350. Peel potatoes and mash potato flesh | |
Add potato flesh, chopped herbs, chili flakes, pepper and salt to the ground beef. Form oval or round cutlets. | |
Beat up 2 eggs. Dip cutlets in egg mixture and roll in almond flour | |
Place in a single layer in airfryer and fry at 370 for 7 minutes. Flip them over after 7 minutes and air fry for another 7 minutes. Air fry at 400 for 3 minutes to get crisp, brown cutlets |
On a personal note this summer has been one of our craziest family wise. Let’s see: we were all supposed to take a 3-week trip to India in August. Then dad fell ill, so I went alone for 3 weeks in May/June which was good since they needed me at that time and there is something special about going back to visit parents alone sans family. Then hubby and youngest went to India for 3 weeks in July so that’s a total of 6 weeks apart. We always do stuff together as a family in the summer and ever since my oldest started college, summertime is precious time and will be for the next few years that I have both kids around. Most times its simple stuff like cracking some popcorn and watching movies, playing board games (scrabble is a favorite) going for hikes in our own backyard leading to a creek trail, backyard barbecues or just eating good food. Not being able to do “all this” as much this summer, felt kind of different but hey summer is almost over. Life doesn’t always turn out the way we plan but we go with the flow, roll with the changes and it all works out. The last few days have been family time and in-between work I have unplugged from SM, hung out with my kids, hubby and am so glad there are still a few precious days of summer left before kids head back to college and school.
