Quick And Easy Instapot Mutton Biryani Packed With Flavor

Mutton biryani cooked tender and soft in an instapot. I am told I make a mean biryani and I like making biryani. Infact one of my dreams is to have a food truck ( laugh at me if you wish) and sell biryani bowls and other Indian fast food from my food truck. Who knows when I retire as a nutritionist, you may just see me having my own food truck. I usually make biryani in a huge dutch oven but when it’s just my family I make biryani in the instapot and  since a lot of folks have asked me for my instapot biryani recipe I decided to blog it.

I find instapot biryani comes out very flavorful. I think the art of cooking it under pressure makes it so. Just like life, under pressure we turn out better.  My recipe is very easy. I cook the mutton aka baby goat first and then cook the actual biryani in my second instapot round. I tend to use a lot of meat because I  buy a whole baby goat which retails for 5.99/lb rather than buying goat at 9.99/lb. I usually find someone to share the goat with and we split the cost. If you’re cooking with any other meat you can still follow this recipe but sub the mutton for chicken or beef. Fresh herbs like mint and cilantro make for a tasty biryani and yeah I have a confession. I use store bought biryani masala and add some stuff of my own. If you want to use masala from scratch use the measurements from this recipe. It’s important to reduce the water when using the instapot because the rice will cook in its own steam. In general 1: 1 and half is a good measure for water. I used the instapot to saute the masala and that turned out easy in terms of clean up etc. Only one pot to clean.  Anyways check out my instapot recipe and let me know if it turns out ok. Instapot Mutton Biryani

Ingredients

  • 4 Lbs mutton or baby goat
  • 1 onion (sliced)
  • 1 tomato (chopped)
  • 3 bay leaves
  • 4 cloves
  • 3 cardamom
  • 2 Heaped tablespoons (biryani masala ( I used shaan))
  • 4 Tbsp ginger garlic paste
  • 1/2 cup mint (chopped)
  • 1/2 cup cilantro
  • 1 Tsp salt (( to taste))
  • 5 Cups rice
  • 7 Cups water or mutton broth
  • 3 Tbsp coconut oil
  • 3 Tbsp ghee
  • 4 to 6 green chilli (optional)
  • 1 Large piece cinnamon

Directions

cook mutton in instapot with 2 cups water and a little salt for about 12 minutes under pressure ( manual setting). Set aside
Clean out the instapot dish and put on saute mode. Heat both oils, add bay leaf, cloves, cardamom, cinnamon and saute about 3 minutes. Add onion and saute till translucent and brown. Add ginger garlic paste, tomatoes, green chilli, biryani masala and saute about 7 to 10 minutes till its nicely fried
Add salt and 6 to 7 cups liquid. Let it come to boil
Soak rice for about 15 minutes before adding to the hot liquid in the instapot
Add mint, cilantro, check salt and close the instapot. Manual setting of 8 minutes works for me but you can also put the rice mode and let it cook.
Do natural release and open the instapot when you're ready to eat.
Enjoy with a little yogurt or raita

I have been pondering friendships, relationships, acquaintances…..new ones mainly that may be a part of life going forward. I am a broad-minded person and love all kinds of people in general. When I am with real life folks my SM gets very little attention.  I like myself, simple as I am and appreciate skills others have, even admire them. Different folks make life interesting and I love that.  I am no relationship expert but I feel relationships thrive better with mutual respect and understanding differences. I am one of those folks that needs space. When I am stressed I often go for a jog outdoors and my family understands that and let’s “mom” get her space to recharge. If stuff distracts or disturbs,  me I tend to retreat like a tortoise, inside a shell just for myself really. A protective mechanism I have developed which works. That may seem rude to those that don’t know me but that’s just one of my ‘self care’ quirks.  I have two daughters at an age where I need to be there for them, a husband in a high stress job, plus some other folks I help who need me and I don’t want to get distracted by stuff that shouldn’t matter so sometimes retreat it is.
Going back to space, I often think of sleep as space. A time when you do nothing…..just rest, recharge and  12 hours or more would be awesome but hey who gets that much. Will take 8 but any less than that, don’t know about you but makes me crabby.  But anyway with relationships and giving space I cannot control other folks, only me. So I will work on me even if it’s retreat and just love, live laugh my way through life! Take life easy for my own sake and others.
