Sesame seeds, sunflower seeds, peanut butter, protein powder rolled together in a powerful energy ball. Roll these in coconut and you have your own state-of-the art and healthy Ferrero Rocher! Lately all my posts have been inspired and this post is no exception. My daughter’s friend who is like my adopted daughter, has severe anemia and is not responding favorably to iron pills. So I have been trying to pump her with iron rich foods like liver curry, spinach etc. I created this recipe for her, as an easy snack, she could have when she’s on the go. When you’re busy, this “on the move energy ball” or “power ball” as I call it will sure come in handy. It’s portable, healthy, easy to eat and yummy to boot, giving you a quick pick me up and a burst of energy. These are seriously finger licking good and have a nice bounce to them that will have you eating them by the ballfull. Believe me!
I had to experiment a little before getting the right consistency and I ended up making 3 kinds. Much like life I just went with the flow and created different ones as the inspiration hit me. One is a pure keto ball that can also sub for a fat bomb. Another has dates and molasses added to the keto ball making it a powerhouse of easily absorbable iron. Then I rolled the date seed ball in coconut flakes and made a third kind. Three kinds to meet each need. One of my kids and my adopted daughter don’t care for coconut so they liked the second one. I like the first one (keto bomb) and I roll it in coconut when I want a different taste. Ok just to clarify, I am not on a keto diet. I did try it for a few weeks last year and it did wonders for my health in terms of sugar control and satiety. I lost some serious weight too but I could not stay on it long term because I love different fruits. Mangoes, melons, guavas – a total “no-no”on a keto diet. So I follow a more paleo kind of diet for the most part except for the times I go completely off and eat some rice (my comfort food) and sweets. I do however drink keto coffee quite regularly coz I like what it does to my brain in terms of clarity energy and concentration.
Well, back to the energy balls. Gather the seeds and dry fruit, mix with peanut butter, protein powder ( I used peanut butter powder as my protein powder) some coconut oil and form into balls. Then roll the balls in coconut flakes and they are ready. Raw, unprocessed, natural, iron packed energy balls to boost your energy and feed your brain. From my kitchen to yours. Ingredients
- 1/2 cup sesame seeds
- 1/2 cup sunflower seeds
- 2 Tbsp peanut butter
- 1 Tbsp coconut oil
- 5 dates (optional)
- 3 Tbsp unsweetened coconut flakes
- 1 Tbsp molasses or honey (optional)
- 1/2 cup Protein powder ( I used peanut butter protein powder
Note
Add dried cranberries, raisins other fruit for a sweet kick
Directions
Pit dates. Chop into small pieces. | |
Mix all the dry ingredients except the coconut flakes with coconut oil and form into balls. | |
Roll in coconut flakes and refrigerate. |
