Tangy lemon cauliflower rice with red onion, ginger, cilantro, turmeric & heaps of peanuts! This is a dish that was born out of convenience. I usually make a traditional lemon rice when I have leftover rice, so that my family will eat it the next day and not grumble that it’s the same dish. This time I made a lot of lemon mixture, so I bottled the extra. The next day I was in trader joes and I saw riced cauliflower and I remembered my lemon rice mixture! Hmm how would it taste with cauliflower rice? So, I warmed up my cast iron skillet, threw in some oil, more red onion, peanuts & tossed the rest of the lemon peanut mixture in. Added the cauliflower rice to it and created a new dish! It was delicious. My simplest cauliflower rice recipe yet but my tastiest I think. You can eat this rice plain as is or pour some curry over it. This would make a lip-smacking picnic food. The lemon acts as preservative and prolongs the shelf life of the dish making it an ideal picnic salad or side dish that would not need refrigeration. It freezes well so the extra goes into single serve Ziplocs and I defrost when I need. Try making my lemon cauliflower rice and let me know how you like it. Cauliflower is a high fiber vegetable that is packed with vitamin k, omega 3 and has anti inflammatory properties. Peanuts are good source of protein & healthy fats while lemon lowers the Glycemic Index of the food and adds a good boost of vitamin C
How to make cauliflower rice : Take a fresh head of cauliflower. Manually grate into a couscous kind of consistency. You can also use a food processor. If you want to rice an entire cauliflower, you can freeze portions of it for later use. It freezes really well. You can also buy riced cauliflower at major grocery stores. You can find it in the frozen section and fresh produce section. Lemon Cauliflower Rice

Directions
Heat oil, add mustard seeds ans saute till they splutter. Add red onion and saute about two minutes.
Add chili flakes, ginger, turmeric and raw peanuts and saute about 4 - 5 minutes
Add lemon juice, salt and riced cauliflower. cook about 10 minutes till cooked.
Add chopped cilantro and mix well
On a personal note, I have thinking about friendships the last couple days. When I was a systematic blogger I used to blog about 3 to 4 times a week (don’t ask me how) and I had a lot of blogging buddies, esp. on Twitter coz everyone knows that’s the place bloggers go to share their posts. I was looking for them and a few are still there while others have disappeared. Some remember me. Some don’t, and I was thinking of how friendships evolve over the years. Some friends stay with us all through our lives. Some friends float through our lives, change us along the way and when it’s time, they leave. I always feel a little sad when friends leave but that’s life.
A wise friend once told me ” the easiest friendships are the ones where you can just be yourself and go with the flow” Realize that friends may need you sometimes & may not too. And that’s fine. I have found this to be true in my life. I have some girlfriends esp. in India, where I grew up, who I meet after years and it’s still the same even though we didn’t stay in touch. Others I meet and apart from a warm smile I can’t think of anything to say. And while I am thankful for every friend, every person who has graced my path it’s easier to just go with the flow. There is freedom in letting go. Que Sera Sera! Friendships that will be, will be!
