Orange Glazed Pork Chops With Caramelized Onion and Ginger

Tender juicy pork chops smothered in a tangy sweet and spicy orange glaze with a generous coating of caramelized onions! Every once in awhile, I hit jackpot and this is one time I would definitely say I did. I chanced on this recipe when a foodie friend of mine on Twitter tweeted it. It just looked and
sounded so delicious I had to make it. You can find that recipe here, but I made a few modifications to my recipe. I added some spice, caramelized onions, ginger and  used fresh tangerine instead of canned. I also cut the brown sugar in the recipe by half since I am trying to eat a modified keto diet this week.  As the dish is baking, your kitchen is filled with the aroma of fresh caramelized oranges that fill up your senses with a heady citrus feeling! When you bite into it, the intense flavor of  citrus with caramelized onion, chilli and all the other stuff just feels exotic! It was super yummy, a recipe my family has been asking me to make again and again. I used two of my cast iron post to make  this! I love baking or cooking in cast iron and feels the flavor gets intensified when you roast anything in cast iron.

It’s pretty simple! You sear the pork chops with some spice on each side. Pour a rich sauce over it, add a coating of fresh orange segments, ginger and caramelized onion on it and then you just bake it and forget it for a glorious 40 minutes. With all that stuff over it, the pork chops can’t help but soak up all that goodness and turn into one of the most flavorful tender chops I have ever tasted. I cook covered for 35 minutes and uncovered for 5 minutes. Just 40 minutes to pork heaven! Serve hot with steamed veggies or over rice!

Nutrition wise:  Pork is considered white meat and is good protein. It has a fair amount of iron and b vitamins. Oranges are packed with vitamin C and and add a powerful punch to the dish. Onions have a lot of good stuff in them that are preventive against cancer.  A nutrient loaded dish!

Ingredients

  • 6 pork chops (about 2.6 lbs)
  • 1 Tsp cumin
  • 1 Tsp black pepper
  • 2 Tsp salt
  • 2 Tsp chilli flakes
  • 1 Tsp olive oil
  • 3 onions (sliced)
  • 2 Tbsp brown sugar
  • 1/2 " piece ginger (grated)
  • 6 tangerine oranges (sectioned)
  • 1/2 cup ketchup
  • 2 Tbsp mustard
  • 1 Tbsp chili sauce

Note

SOmit chili flakes if you need less spice and add more brown sugar for more sweet chops.

Directions

Make a dry mix of pepper, 1 tsp salt, cumin and 1 tsp chili flakes and smear over pork chops and marinate a few hours
Heat olive oil. Sear pork chops on pan for about 1 minute on each side and set aside
Saute onion on a pan for 5 to 7 minutes or until nicely caramelized. Add 1 tsp sugar to the onions to speed the caramelization process.
After onion is nicely caramelized, add orange sections, 1 tsp chilli flakes, grated ginger and cook for about 3 minutes till semi soft. Add 1 tsp salt . Set aside the mixture
Mix ketchup, mustard sauce, 1 tsp sugar, chili sauce and mix well
Take a baking dish and spray with non stick cooking spray or oil. Place pork chops in one layer. Pour the sauce mixture over the chops. Put the caramelized onion, orange mixture over the chops. Cover and bake at 350 for about thirty minutes or till a knife can go through it easily. Baste with oil if the chops seem dry. Bake uncovered for 5 minutes.
