Cauliflower rice with spinach, garlic and caramelized onion. My simplest, yet yummiest cauliflower rice dish yet! Sometimes you want a simple rice, not over spiced, and this is just that. A rice that can be eaten with a side of gravy, a curry or just alone! Simple as it is, this dish is loaded with subtle flavors, courtesy, the garlic which pairs well with spinach and caramelized onions. I love caramelizing onion. When the onions get brown the natural sugar in onion caramelizes and give it an intense burst of flavor that adds so much to any dish. So for this recipe, you caramelize onion, add spinach, a dash of pepper, cauliflower rice and lots of garlic. I used a whole pod of garlic for this dish. Half of the garlic I used after caramelizing onion to infuse the flavor and the other half, I used at the very end, to get the full goodness and nutrition. Raw garlic is so good for us, and the more raw, the more of the healing power of garlic your system gets. Eating raw garlic can be quite a challenge, but by adding it towards the end of cooking, you get the benefits, and the dish get a fragrant, garlic flavor. This can also double as a warm cooked salad or side served with a side of avocado. I love cooking with cauliflower. It is such a versatile vegetable. How to make cauliflower rice : Take a fresh head of cauliflower. Manually grate into a couscous kind of consistency. You can also use a food processor. If you want to rice an entire cauliflower, you can freeze portions of it for later use. It freezes really well. You can also buy riced cauliflower at most grocery stores. I found a great deal at Costco where they sell 6 individual frozen packs for about 8 dollars. Just pull out a pouch that makes about 4 to 6 cups depending on what you put into it.
Cauliflower is packed with fiber and nutrition. Cauliflower is part of the cruciferous family and has compounds that strengthen the immune system. It’s an excellent source of folate and vitamin C. Just three raw florets provide 67 percent of the Daily Value (DV) for vitamin C. Garlic is also an excellent immune booster especially when eaten raw or in near raw state. Throwing some crushed garlic in at the end of cooking increases potency of a compound called ” allicin” in garlic and provides all the cold fighting benefits. Spinach is full of vitamin A, C, K, potassium, iron, fiber and calcium. A lot of good nutrition in this dish.
Spinach Cauliflower Rice

Ingredients
- 4 Cups riced cauliflower (fresh or frozen)
- 1 Large onion (sliced)
- 4 Cups Fresh spinach or 2 cups frozen spinach
- 1 Pod garlic (peeled)
- 1 Tsp pepper
- 1 Tsp salt
- 1 Tbsp olive oil
Directions
Heat oil. Saute onions about 5 to 7 minutes till it caramelizes. | |
Coarsely chop garlic. Add half the chopped garlic and pepper to the caramelized onion and cook 2 minutes. | |
Add chopped spinach and cook about 5 minutes till half cooked | |
Add cauliflower rice and salt. Cook another 5-7 minutes till cauliflower rice is fluffy. | |
Add remainder chopped garlic and cook 1 minute |
