2 Ingredient Chocolate Swirl Banana Ice Cream

2 Ingredients! That’s it!! For the most delish guilt free ice cream in the world.  It’s as simple as you can get! Back to the basics literally if you don’t count a gadget needed to actually make the ice cream! A friend brought us two dozen ripe bananas. We love bananas in our home.  A staple. Both my husband and I have mild blood pressure and a potassium packed banana a day is pretty much in our diet! If kids don’t have time for breakfast they grab a banana on their way out.  But these were ripe bananas needed to be used up fast. Banana bread? banana pudding? With dear husband on a gluten free diet this week – not a good choice. My foodie friends have often raved about banana ice cream and since I really didn’t have any other dessert-like ingredients at home except semi-sweet chocolate chips I decided to try it. Talk about necessity being the mother of invention. I was pleasantly surprised to discover it was just as they had described and better. Creamy, smooth and totally decadent. Sure beats eating a banana! Guilt free literally except for the chocolate chips but then antioxidant packed chocolate is good for you so I would call this a 100% healthy treat!

It was pretty simple. Freeze bananas, even the over ripe ones minus the skin. 2 of the bananas were over ripe but I froze them anyway. They made the ice-cream sweeter. Just use a food processor or a powerful blender like the Vitamin and blend until you get a creamy soft serve consistency. That’s it!  No sugar, although next time I may use some coconut rum or honey to vary the taste.  I melted some semi-sweet chocolate chips that I always have thanks to Costco selling huge bags dirt cheap and made some smooth chocolate. I swirled the chocolate into the banana ice cream and it was perfect. Served it with some extra sauce, banana slices and chocolate chips and it was a simple, elegant decadent dessert made just from two ingredients. How much simpler could this get. If you don’t have a food processor or a powerful blender I recommend adding a little milk or cream when you blend the bananas.  That will do the trick and make it a 3 ingredient ice cream.  Now that I have experimented with just banana ice cream my mind is spinning with possibilities. I want to swirl some pureed strawberries or caramel in next. Add some nuts and chocolate pieces and there you are – chunky monkey ice cream. Take those ripe bananas in your home and turn them into a creamy sweet treat that you can eat guilt free. Your taste buds and your sweet tooth will thank you for it! Nutrition Wise

Banana is packed with heart healthy potassium, B6 and can refuel your body better than a Gatorade can. It’s the perfect pre-gym workout food and and a great snack to that quick, much needed  energy. If you feel it’s “too carb” rich pair it with a protein like nuts or peanut butter to lessen its impact on your blood sugar. It also has serotonin and dopamine which increases the body’s response to stress. Eating a banana when you’re anxious may be just the thing to do. Chocolate is also packed with antioxidants. It contains biologically active phenolic compounds which can improve aging, blood pressure, oxidative stress and heart disease.  Who would have thought a simple banana mixed with chocolate could be so good!

Chocolate Swirl Banana Ice Cream

Ingredients

  • 5 ripe bananas
  • 1 cup chocolate chips

Note

If you do not have a powerful blender or a food processor, add a little cream or milk to the bananas while blending and stick it into the freezer before serving.

Directions

Peel Bananas. Freeze Bananas for 2-3 hrs
Puree bananas until smooth in a food processor or powerful blender
Melt chocolate chips in a double boiler or in the microwave
Swirl melted chocolate gently into the pureed banana ice cream
Serve with extra chocolate sauce and sliced bananas
