Hearty sweet potato quinoa chili packed with beans, fiber and other good stuff! I love chili and this one is a hot favorite. Drizzled with some coconut milk it can transform into a creamy chili. Eat it plain or with coconut milk, it’s a filling treat either way. My Sunday Supper team is doing a thrifty theme where we make cost effective meals and when you come to cost effective, it doesn’t get easier and cheaper than chili. A hearty chili with a hunk of bread can be a complete meal. I did not cost this chili price wise, but looking at the ingredients you can tell it’s thrifty and nutritious! The Sweet potato adds a good bite to it and makes it very filling! I added red quinoa to add some protein and it seriously improved the taste. I love this chili and I am so pleased to share it with you!
Sweet Potato Quinoa Chili
Ingredients
- 1 cup black bean
- 1 cup kidney beans
- 1 onion (sliced)
- 1 bell pepper (chopped)
- 2 Cups crushed tomatoes
- 2 Cups sweet potatoes (cubed)
- 1 Tsp cumin
- 1 Tsp chili
- 1 Tsp paprika
- 1 Tsp salt
- 1 Tsp ginger (grated or paste)
- 1 Tsp garlic (crushed or paste)
- 2 Tbsp coconut oil
- 1/2 cup coconut milk (optional)
- 1/2 cup raw quinoa
- 2 Cups vegetable stock or coconut water
Directions
chop all ingredients as required | |
Heat coconut oil for few seconds. Add dry spices, ginger, garlic and saute 3 minutes. | |
Add all other ingredients including stock and cook on medium for 15 - 20 minutes | |
Simmer on low for 40 minutes till sweet potato is tender and quinoa is soft | |
Drizzle with coconut milk if desired for a creamy chili |
