Chunky Chicken Tortilla Soup with a sprinkling of fresh herbs and spices makes a comforting meal. Fall if here and my Crockpot is out! I love making slow cooker, one pot meals once the cool weather sets in. Crockpot meals are easy, convenient and complete. I love that I can pop some stuff into the slow cooker in the morning and come home after work to a warm meal. I also love the way a slow cooker locks in all that flavor in a way stove top cooking does not. You can make this soup stove top and I have provided a little note on my recipe should you choose to do so. This is my first time making chicken tortilla soup and I must say it turned out pretty good! I used my own blend of spices and some fresh cilantro and lemon to give it some zing! My spice mix consisted of chili, cumin, paprika and turmeric. I used corn tortilla chips and I added them just before serving. You can keep some cheese, guacamole, sour cream etc on the side as garnish. I like adding guacamole to my soup and my kids like cheese. My kids and husband lapped up the soup…sure sign that it was good! Hope you enjoy making it as much as I did.

Chicken is a good source of lean protein and zinc. Tomatoes are packed with lycopene and vitamin C while the beans and corn add a burst of fiber to the soup. Top this with all the exotic spices and you have an antioxidant packet high fiber chicken tortilla soup!
Chicken Tortilla Soup
Ingredients
- 4 Chicken thighs chopped into small chunks
- 1 onion (diced)
- 1 bell pepper (diced)
- 1 can crushed tomato
- 2 Pods garlic
- 1 can black beans (rinsed)
- 2 Cups corn
- 1 Tbsp corn flour
- 4 Cups chicken broth
- 2 Cups water
- 1 Tsp chilli
- 1 Tsp cumin
- 1 Tsp paprika
- 1 Tsp salt
- 1 Tsp pepper
- 1/4 cup cilantro
- 1/2 Tsp turmeric
- 2 Cups corn tortilla chips
Note
Slow cook on high for 6 hours or slow for 8-10 hours.
Stove top method : Cook half hour to 40 minutes
Directions
Chop onions, bell pepper. | |
Add to slow cooker with chicken stock and water | |
Add chicken pieces, corn,beans, spices, salt, tomatoes to the slow cooker | |
cook 4 hours on high | |
Add cornstarch to warm water and mix well. Add to crockpot mixture and cook another 2 hrs. Add olive oil and cilantro | |
Serve warm with tortilla chips, sour cream and gaucomole |
