Boiled eggs smothered in a peppery mix of caramelized onion! This makes an easy weekday supper that is a popular favorite in my home. Just boil eggs, make a caramelized mix of onion and mix them together. You can eat these eggs over rice, with some bread or just plain with some salad as I usually do. I love that this dish is so versatile and easy. It takes me about 15 minutes to make.
Tip: Just add some salt to the water as you boil the eggs and you have easy to peel eggs.
Caramelized Onion Egg Curry
Ingredients
- 6 eggs
- 1 Large onion (sliced)
- 1 Tbsp fresh crackled pepper
- 1 Tsp salt
- 1 Tsp brown sugar
- 2 Pods garlic (rushed)
- 1 Tbsp olive oil
- 2 Tbsp cilantro or parsley
Directions
Boil eggs | |
Saute onion with brown sugar for 10 minutes till nicely browned | |
Add oil, garlic, pepper, salt and saute another 5 minutes till onion become caramelized | |
Peel eggs, slice into half and gently toss onion and eggs together |
