Chicken meatballs simmered in a creamy sauce poured over rice or pasta is a favorite in my home. I just spoon some over salad when I want to go low carb. This dish is so versatile, it works for every member in my family. I like this dish because it’s super easy to make, not to mention healthy. I use a ready-made chicken meatball from Trader Joe’s but if you want to make chicken meatballs from scratch, use this recipe. It would work well with any kind of meat ball, really. The sauce is a blended mix of onion, garlic, ginger, red peppers, tomato, coconut and some spices. Hope you like it! From my family to yours!!
Coconut Chicken Curry Meatballs
Ingredients
- 20 Medium Chicken meatballs
- 1 Large onion (sliced)
- 1 Bell pepper ( red, orange or yellow) (sliced)
- 1 Tsp ginger paste or chopped ginger
- 4 Pods garlic
- 1 Tsp chili flakes
- 1 tomato (chopped)
- 2 Tbsp coconut meat or flakes
- 1 Tbsp coconut oil
- 1 Tsp cumin powder
- 1 Tsp turmeric
- 1 Tsp pepper powder
- 1 Tsp salt
- 1/2 cup cilantro (chopped)
Directions
Heat oil, add onion, ginger, garlic and saute for 2 minutes. Add tomato, bell pepper and saute another 3 minutes. | |
Blend all sauteed ingredients with coconut to a smooth paste and transfer to stove | |
Add cumin, chili flakes, turmeric, salt and pepper to the blended mix and saute another 3-5 minutes till oil floats on top | |
Add meatballs and simmer 12-15 minutes till cooked | |
Add cilantro and serve hot over rice noodles, rice or salad. |
