Healthy Zucchini bread with apples, oats and flax makes a hearty snack or breakfast. My kids are not really fond of zucchini but they love my zucchini bread! This bread is loaded with zucchini: 3 cups shredded zucchini and one cup shredded apple! You do the math. All this in one loaf of bread giving them a whopping serving of veggies and fruit per slice. My Sunday supper team is doing a ” Back to school” theme and are all coming up with easy snacks and foods that are kid friendly and fuel for their brains. I decided to make my zucchini bread since it doubles as both a snack and a quick breakfast item. The perfect pick me up for busy kids on the go! The fact that it’s loaded with veggies is just the icing on the cake ..oops I meant bread :)! The apples sweeten the bread, zucchini gives it moisture and the flax gives it a nice roasted flavor. I used a mix of oats and rice flour to make a gluten free mix but you can use any ready-made gluten free mix as well. If you’re not crazy about making this gluten free, just use whole grain flour. I love how you can sneak so much veggie into this loaf of apple zucchini bread! My husband who is not usually too fond of breads in general, actually wanted a second slice so I guess it must have been good!
Nutrition Wise!
Plenty of fiber in this gluten free zucchini bread thanks to the oats ,zucchini, apple and flax. Flax also adds a healthy dose of omega 3 and healthy fat! Oats are heart healthy ! All in all a bread brimming with nutrition and flavor!
Vegan option: Skip the eggs and use flax eggs instead.

Ingredients
- 1 and 1/2 cup oat flour
- 1 cup rice flour
- 3 Cups shredded zucchini
- 1 cup shredded apple
- 1/4 cup flax meal
- 2 eggs (or 2 flax eggs)
- 1/4 cup vegetable oil
- 1/4 cup raw sugar
- 1 Tsp baking powder
Note
Make your own oat flour by blending a cup of oats.
whisk 2 tbs of flax seed with 2 tbsp water to make flax egg for a vegan option
If using ready made gluten free flour, skip the baking powder. You can use cups of whole grain flour in place of oats and rice flour if you are not making the recipe gluten free
Directions
Shredd 2 zucchini and 1 apple to make a total of 4 cups puree | |
Blend eggs, oil, sugar together | |
Sift flours together with baking powder | |
Mix the pureed veggies and fruit with the flour. Add egg, oil mixture to flour | |
Grease a loaf pan and bake at 350 degrees for 45 minutes till a toothpick comes out clean |

Hello….Can you help me??? I make a zucchini walnut bread with whole wheat flour, applesauce (instead of oil) and the recipe calls for 3 eggs…Last night I used a pre-ground flaxseed and water egg. Cooking it an extra 30 mins and it still was wet mush inside. All 4 loaves are in the garbage. Can you tell me what I did wrong??? I love this recipe (and so does everyone else) and I’m trying to not use eggs anymore.

Use more flour to help it bind. Use an extra half cup of flour or 1 cup. Will do the trick.
