Fresh tomato jam with a hint of ginger, paprika and cayenne. This jam is made with coconut sugar making it low glycemic and diabetic friendly! My Sunday Supper team is doing a ” Saving Summer” theme and I am making a spicy tomato jam. One of my favorite things about summer is all the fresh produce and herbs. I love local produce and frequently shop at local farms and farmer’s markets. I have always wanted to make tomato jam and gave it a shot this weekend. I was slightly nervous since it is the first time I am using coconut sugar in a jam but it turned out pretty good! For those of you who are not familiar with coconut sugar, it is the ‘New Black’ for people who want a healthy sugar that is all natural and kind to your body! It has a lower glycemic index thus making it a sugar that is diabetic friendly when eaten in moderation. It has a nutty caramel flavor which imparts a rich flavor to anything. I used less sugar in this tomato jam but I used a low sugar pectin which makes the tomatoes gel very nicely and appear like a nice gooey jam. My tomato jam had seeds, skin, was kind of chunky and tasted melt in mouth delish! I love that it satisfies my sweet tooth and makes me feel a little less guilty when I reach for the second smear! I love this experiment and will definitely be making more jams with coconut sugar!!
Tomato Jam
Serves | 8 ounces or 4 2oz jars |

Ingredients
- 4 large tomatoes
- 1 cup coconut sugar
- 1 Inch piece ginger ginger (finely chopped)
- 1 lemon (juiced)
- 1 Tsp paprika
- 1/2 Tsp cayenne
- 4 Tsp low sugar pectin
Note
If not using a pressure cooker, slow cook on stove about an hour till tomatoes are nicely cooked.
Directions
wash and chop tomatoes and ginger | |
Pressure cook with cayenne, paprika, sugar and pectin until 2 or 3 whistles. | |
Remove from cooker and puree in a blender | |
Return to stove and cook on simmer 10-15 minutes till mixture thickens | |
Pour in jelly jars and cool |

Love the deep dark color of your tomato jam with coconut sugar, Sunithi! The only thing I’ve ever used it for was coconut ice cream and it really does add a lovely flavor.
