Gluten free strawberry banana oat muffins crisp on the outside and soft on the inside. My Sunday Supper team is doing a picnic theme and I am bringing strawberry banana oat muffins. To me picnic food has to be portable, easy to transport and require minimum clean up. I love picnic food and usually take my lemon rice which holds well and makes a neat side. Sometimes I take muffins as a grab snack for the kids who are too excited to eat. I have made banana muffins before but this is the first time I’m adding strawberries to it. It turned out really tasty but there are a couple of things I would probably improve next time. I used two bananas which made it really soft and gooey. Next time I will use one. It will probably add better shape to the muffins which were a bit flat. Although I must say the muffins had more fruit than flour which was nice! Overall a nice fruity strawberry banana oat muffin which melts in your mouth.
Strawberry Banana Oat Muffins #SundaySupper

Ingredients
- 1lb strawberries (cleaned and chopped)
- 1 banana
- 2 Cups oat flour
- 2 eggs (or 2tbsp flax egg)
- 1 Tsp baking powder
- 1/2 cup milk (I used almond)
Note
Make your own oat flour by blending 2 cups of oats.
Whisk 2 tsp flax meal with 1 tbsp water and whisk to make flax eggs.
Directions
blend bananas with milk and eggs till smooth | |
Mix flour with baking powder. Add banana mixture and whisk for 2 minutes till nicely mixed in | |
Gently fold in cut strawberries | |
bake at 350 degrees for 25 minutes till a toothpick comes out clean |

Yum! Muffins are quintessential for a picnic. I always associate them with being wrapped in red-checkered cloth inside a woven basket – I have no idea why, maybe it’s all those episodes of Desperate Housewives and Bree bringing muffins to her neighbors….
