Crisp spinach pakoras stuffed with cashews doused with a tangy date sauce! These golden nuggets made with chickpea flour and spinach are melt in mouth delish and make a savory green snack! My Sunday Supper team is having a green food theme in honor of St Patty’s day and I am bringing my spinach pakoras. In general, pakoras can be baked or fried and this is my baked version. I added cashew nuts and some tangy red onions to the mix which gave the spinach pakoras some extra crunch. I like to pair it my tangy date sauce which adds a hint of sweetness to it and make it all the more delactable! Snack or side, these spinach pakoras are always a welcome treat in my home ! Crunchy, savory and green I can eat these as a meal. Vegan gluten free spinach pakoras!
Nutrition Wise:
Spinach is packed with vitamin A, C, iron, fiber and antioxidants! Cashews are loaded with heart healthy oleic acid and protein. Chick pea flour which is the base for this dish adds fiber and makes this a low gylcemic dish!

Ingredients
- 1/2 cup chick pea flour
- 2 Cups fresh spinach (chopped)
- 1 Small red onion (sliced)
- 1/2 cup cashews
- 1/2 Tsp cumin powder
- 1/2 Tsp chili
- 1 Tsp salt
- 2-3 Tbsp water
Note
Pakoras can also be deep fried for a minute or two in hot oil. Drain excess oil on a paper towel
Directions
Mix salt, cumin, chili with chick pea flour. Add water to make a thick paste | |
break cashew into small bits. Add cashew, sliced onion and spinach to the chick pea mix | |
Make small balls with the chickpea mix and place on a greased cookie sheet or baking tray | |
Bake at 350 degrees for 30 minutes. Flip the pakoras and bake another 10 minutes till crisp |
