Quinoa Black bean burgers crisp on the outside and soft on the inside. Vegan burgers bursting with beans, corn and quinoa! My Sunday Supper team is doing a Meatless Sunday theme to kick off lent season and I am bringing my quinoa black bean burgers. Lent is a season when a lot of people give up something and often meat is one of them. I went totally vegan one lent season and it was challenging! I had to be creative and I cooked with quinoa a lot. This was my first time making quinoa black bean burgers and I made my burgers spicy! I added cumin, turmeric, chili flakes, paprika, black pepper and some fresh ginger, garlic . Some interesting Eastern flavor in there! I was quite nervous about whether the burgers would hold up since I was not using egg but it did hold shape. I added some flax and that may have helped it bind. Anyway, the quinoa black bean burger went into the oven and came out all crisp, golden delicious and totally yummy! With burgers like these I can do vegan at least for a few days!! Sneak it into a bun or eat it plain smothered with sauce and it’s a savory treat. I ate mine with some tangy mint sauce!
Nutrition Wise!
Quinoa is a good source of protein and is packed with antioxidants. It’s a great protein addition for vegans/vegetarians. Black beans are loaded with fiber and heart healthy photo-chemical! Flax adds some healthy fat and omega 3 while the Eastern spice add to the antioxidant power of this dish! The nice part about a quinoa black bean burger is combining of the different protein sources to make a more complete protein! Ingredients
- 1/2 cup quinoa ( raw)
- 1 Small potato
- 1 can black beans rinsed
- 1 cup corn kernels (cooked or lightly steamed)
- 1 Small onion (chopped)
- 1/2 cup cilantro (chopped)
- 1/2 Tsp ginger (grated)
- 1 Tsp garlic
- 1/2 Tsp turmeric
- 1 Tsp cumin powder
- 1 Tsp pepper
- 1 Tsp salt
- 1 Tsp flax meal
- 1 Tsp chili flakes (optional)
- 1 Tsp paprika
Note
You can also roast the burgers in a frying pan instead of baking
Directions
Cook quinoa in 1 and 1/2 cups water for 15-20 minutes till cooked. Drain off excess water by using a paper towel. | |
Bake or boil potato and peel skin | |
While quinoa is cooking, finely chop onion and cilantro. Rinse back beans and drain. Cook corn till cooked. | |
Mix quinoa with potato and add the rest of the ingredients in and mix well. Use hands or fork to mix everything really well | |
Form into patties and bake at 350 for 20 - 25 minutes till crisp on the outside. Flip the burgers and bake another 8-10 minutes | |
Remove from oven and enjoy these meatless wholesome burgers. |
