Tuscan soup with wholesome beans, chicken chunks, fresh spinach and roasted red peppers makes a hearty warm meal! My Sunday Supper team turns two today and we are all making a Sunday Supper recipe in celebration. I decided to make my Tuscan soup which I made for my very first Sunday Supper post which also happens to be the day Sunday Supper made its debut! Special day indeed! When I started blogging, I was not traditionally a food blogger but more a health/nutrition blogger spinning off nutrition posts with some smoothie recipes etc. Then I met the fabulous Isabel aka family foodie who she sent me an invite to her food tribe and encouraged me to try out more healthy recipes. I remember the first Sunday supper and all the 9 of us nervously putting forth our recipes 🙂 ! Now Sunday supper has become a household name, sensation, trending almost every Sunday on twitter! I am proud and honored to be part of this team of fabulous food bloggers who have taught me so much about creating amazing recipes and capturing them for eternity via blogging. I would never have blossomed into a creative healthy food blogger if not for them. I still post health and nutrition pieces on my blog, but my I know of some of my most creative moments have been when I worked with a theme and created a Sunday Supper recipe. Ok back to my post, I revamped the recipe a tad by adding some roasted red peppers and I used chicken thighs to get a rich natural stock and the end result was super delicious. I like this version better than my older version. Pair it with some crusty bread, salad and you have a satisfying, nourishing meal.
Nutrition Wise!
Chicken is a good source of lean protein, iron, zinc and B12. Beans offer powerful antioxidant protection and a boost of fiber. Spinach is loaded with vitamin A, C and other good stuff. Add some healthy immune boosting fat via coconut oil and you a nutrition powerhouse in a soup!
Tuscan Chicken Soup with Roasted peppers

Ingredients
- 4 chicken thighs (or 2 cups chicken)
- 3 Cups water
- 1 Tbsp coarsely ground pepper
- 1 tsp cumin powder
- 4 Pods garlic
- 2 Stalks celery
- 1 Large onion (sliced)
- 2 Cups fresh spinach
- 1 can white beans (rinsed)
- 1 cup roasted red pepper
- saltto taste
- 1 Tsp coconut oil
- 1 Tbsp fresh cilantro
Note
Quick recipe tip : use chicken stock and chicken chunks instead of making your own stock.
To roast peppers : bake rec peppers at 450 for 5-7 minutes till soft and slightly backened.
Directions
Cook chicken thighs in water with celery, sliced onion, pepper, cumin, garlic and cilantro for about 30 minutes till chicken is cooked to get chicken stock | |
Remove chicken from fire, de-bone and keep aside. Take out the celery from the chicken liquid and add de-boned chicken back in to the stock | |
Add beans, salt, roasted red pepper and cook another 10 minutes. Add spinach, coconut oil and simmer 3-5 minutes before taking off the fire. |
