Salmon lettuce wraps stuffed with mango salsa. Light, healthy and filling, this meal is perfect for the day before a feast or a holiday. I am participating in weekday supper this week and since it’s the day before Christmas, I wanted to make some light fare that did not require too much effort. A perfect foil for the big feast on Christmas. This dish is easy!!! You can roast the salmon stove top or in an oven, then you just fill up lettuce leaves with the roasted salmon, smother it in mango salsa and dinner is done. Butter lettuce is a favorite of mine and I use it for lettuce wraps whenever I can find it. I like the soft yet crisp texture. Romaine lettuce works well too. I sometimes make my own mango salsa, but if you want to go the easy route you can purchase mango salsa. Costco sells a really good one with peaches and mango. Whether you purchase or make your own salsa, this combo is a winning duet. I hope you like my simple and easy salmon lettuce wraps.
Nutrition Wise!
Salmon is the queen of fish and is rich in brain boosting DHEA, omega 3 and healthy fats that build up your immune system. Lettuce is a good source of fiber, vitamin k and vitamin A. Romaine lettuce has darker green leaves and the deeper the color, the better the nutrition. Romaine lettuce has more folate, vitamin and lutein than iceberg lettuce. Mangoes are a good source of vitamins as well.
Roasted salmon lettuce wraps
Ingredients
- 8 oz salmon
- 8 Leaves butter lettuce (or romaine lettuce)
- 2 Tsp salt (divided)
- 1 Tsp pepper
- 1 Tsp paprika
- 1 Tbsp olive oil
- 1/2 cup mango chunks
- 2 Cups tomatoes (chopped)
- 1/2 cup onion (chopped)
- 1/4 cup cilantro (chopped)
- 1 Tbsp lemon juice
Directions
Cut salmon into 4 pieces. Mix 1 tsp salt, pepper, cumin, paprika and olive oil together ans smear over the salmon | |
Roast salmon stove top or by baking at 400 degrees for 10- 15 minutes till cooked. | |
Mix diced mango, tomato, onion, cilantro, lemon juice and 1 tsp salt and make a fresh mango salsa | |
Wash lettuce leaves. Break fish into smaller pieces. Fill lettuce with salmon pieces and mango salsa. |
