Chipotle squash fries baked crisp with a touch of sweet n spicy! Move aside French Fries, squash is here!! Squash season is in and my Sunday Supper team is doing a squashing theme! I love butternut squash and have used it in soups and baked goods, so I thought I would try something different and make some fries. The weather is getting chilly and it’s a perfect time to eat spicy chipotle fries. It turned out to be quite easy. I just smeared this magical blend of spices along with some olive oil and lemon all over the squash wedges, let it bake and cooked up some delish Chipotle Squash Fries! I use dried chipotle powder but you can use any chili. Add a dash of coconut sugar or brown sugar and you have the perfect blend of sweet n spicy!! The fries had so much flavor we really didn’t’ need a dip, but you can jazz it up with a minty dip if you like. Check out all that gorgeous goodness!!
Nutrition Wise!
Butternut squash has one of the highest concentrations of vitamin A rivaling even potatoes. It is rich in B-complex group of vitamins like folates, riboflavin, niacin, vitamin B-6 (pyridoxine), thiamin, and pantothenic acid. It also has adequate levels of minerals like iron, zinc, copper, calcium, potassium, and phosphorus. Adding spices and olive oil to it increases its antioxidant power and adds a healthy dose of fat! Leave all this nutrition jargon aside, squash is just a flavorful delish veggie and in the form of chipotle squash fries, it is spectacular!
Roasted Chipotle Butternut Squash Fries

Ingredients
- 1 Medium butternut squash (peeled and cut into wedges)
- 1 Tsp paprika
- 1 Tsp cumin
- 1 Tsp pepper (I used lemon pepper)
- 2 Tsp sea salt
- 1 Tsp chipotle powder (or chili)
- 1 Tsp brown sugar
- 2 Tbsp lemon juice
- 2-3 Tbsp olive oil
Directions
Peel and cut butternut squash into wedges | |
Mix all the dry ingredients together and mix with lemon juice and oil | |
Smear the ingredients all over the wedges till they are evenly coated | |
Bake at 450 degrees F for 20 minutes till nicely roasted. | |
If you want crisp fries, broil for 5-7 minutes till fries get crisp on the outside |

This is just fabulous Suni healthy, sweet, tangy delicious.
I’ve made a creamy cranberry dip using Greek yogurt and leftover cranberry sauce. That would be perfect with these too. Yum!
