Pepper chicken smothered with caramelized onion and green celery leaves! Yummy!! This is one of those recipes that get better every time I make it. I don’t usually add caramelized onion to my pepper chicken, but this time I did and it gave it that extra zip that turned from yummy to WOW! I have a magic ingredient that makes my pepper chicken easy and loaded with flavor. I use McCormick’s Grill mates Steak seasoning. It is chock full of cracked pepper and other ingredients which add so many flavors to any dish. The texture of the seasoning itself is all coarse and crumbly and just a whiff can send my senses soaring. I have not been paid by the McCormick company to say this but I really love this product. I had onions lying around so as the chicken cooked I caramelized them in another pan and gently folded them in at the end and the pepper chicken came alive. When you caramelize onion it brings out the intense onion flavor! I used some celery tops to add some color to the dish but it added some flavor too. All in all, an easy to make dish I am sure will become a family favorite!! Look at all that peppery goodness!

Chicken is a good source of lean protein, iron, B vitamins and helps build immune function. Onion is known for its anti-cancer properties, so adding a lot of it to any dish is protective. Additional spices like pepper and paprika increase the anti-inflammatory quality of this dish! Perfect for when you have a cold!
Pepper Chicken with Caramelized Onion
Ingredients
- 2 Lbs boneless chicken (cubed)
- 2 Tbs olive oil (divided)
- 3 onion (sliced thin)
- 2 Tbs McCormicks steak seasoning
- 1 Tsp freshly ground pepper
- 1 Tsp paprika
- 1 Tsp salt
- 1 Tsp ginger (paste or grated)
- 2 Tsp garlic (paste or grated)
- 1 cup celery stalks (finely chopped)
Note
If you can't get McCormick steak seasoning, just add some fresh pepper, cumin, paprika, to make about 2 tbsp of spice mix. Swap the celery leaves for fresh cilantro if you wish.
Directions
Heat one tbsp olive oil. Add 1/3 sliced onion and saute about 4 minutes till dark brown. Add ginger, garlic and saute 2 minutes | |
Add chicken chunks and the steak seasoning and cook uncovered about 30 minutes till it dries up. | |
Meanwhile heat 1 tbsp olive oil. Add remaining onion and cook till it get soft brown and caramelized. | |
Add 1 tsp fresh pepper, paprika, salt to the chicken mixture and cook another 2 minutes. Add chopped celery leaves and caramelized onion and simmer for 2 minutes. | |
Serve hot with rice or in lettuce leaves to make a lettuce wrap |
