Crisp sweet kale salad tossed in a creamy homemade poppy-seed dressing topped with cranberries and pepitas. That’s what we had for dinner last night with some chicken on the side and it looked so pretty, I decided it was definitely blog worthy! Kale is in season now and mixed with vibrant orange tomatoes, crisp cucumbers , red onion and shaved brussels sprouts in a kale salad, it become a nutrition powerhouse. There’s something magical, fresh and wholesome about homemade dressing and this poppy-seed dressing takes seconds to make. I used coconut cream but you can also use yogurt or regular cream. Top this with some dried cranberries and pepitas and you have a Sweet Kale Salad that is healthy, hearty and yummy! Doesn’t it look pretty ? Since both kale and brussels sprouts are cancer fighting foods, this kale salad fits right in with National Breast Cancer Awareness Month (NBCAM).
Nutrition wise:
Kale is a nutrition powerhouse. It is touted to have cancer lowering properties courtesy of Isothiocyanates (ITCs) made from glucosinolates which are present in kale. Packed with flavonoids, it combines both antioxidant and anti-inflammatory benefits. It also has good levels of folic, potassium, vitamin A and fiber! Brussels sprouts are high in vitamins, especially vitamin C, and may even help prevent cancer. Tomatoes contribute cancer fighting lycopene and good levels of vitamin C and vitamin A. Cucumbers are high in silicon which is great for healthy skin and hair. Add the antioxidant power of cranberries and some healthy fat from the pepitas and you have a nutritious sweet kale salad that is perfect for National Breast Cancer Awareness Month (NBCAM)!
Sweet Kale Salad With Poppy Seed Dressing

Ingredients
- 4 Cups Kale
- 1 orange tomato (sliced)
- 2 cucumbers (washed and sliced)
- 1 cup Brussels sprouts (shaved or cut into strips)
- 1 red onion (sliced thin)
- 2 Tbsp poppy seeds
- 2 Tbsp pepitas (or sunflower seeds)
- 2 Tsp poppy seeds
- 2 Tsp lemon juice
- 2 Tbsp honey or maple syrup (I used maple syrup)
- 3/4 cups cream or yogurt (I used coconut cream)
Note
This recipe yields approximately 1 cup of dressing. Use a few tsps for the salad and refrigerate the rest in an air tight container or jar.
