Shrimp Pilaf! Basmati rice simmered in coconut milk with some shrimp and veggies thrown in makes a yummy easy one pot meal! My Sunday Supper team is doing a ‘one pot dish’ theme and I decided to make my shrimp pilaf. I love one pot dishes and when I make a one pot dish I try to make a meal out of it. Lazy, easy and perfect for those days when I come home tired after work. This shrimp pilaf is loaded with veggies so it is a meal in itself. Throw in some milk and fruit and dinner is served! I love using cleaned, deveined shrimp for a quick meal because it’s easy to cook. No cutting of meat required and frozen veggies make it so much easier. I used a garden blend frozen veggie pack which has cauliflower, carrots, snap peas and red peppers. You can use any combo of veggies. Everything is cooked stove top in one pot. I used coconut milk from a carton to give the pilaf a light feel but I used shredded coconut to give it that distinct coconutty flavor. I use heavy coconut milk (cans) for desserts and curries and prefer the lighter one for rice. Mildly spiced with cumin, turmeric and chili flakes my shrimp pilaf is loaded with flavor. Top it off with some cilantro and you have an aromatic coconut rice shrimp pilaf which will transport you to the islands! Sshh don’t tell, but it’s super easy to make.

Coconut Shrimp Pilaf
Ingredients
- 2 Cups basmati rice (washed)
- 1lb shrimp (cleaned and devined)
- 2 Tbsp coconut oil/olive oil
- 1 onion (sliced)
- 1 Tbsp ginger garlic paste
- 1/2 Tsp turmeric
- 1 Tsp cumin powder
- 1 Tsp chili flakes
- 2 Tsp shredded coconut
- 3 Cups vegetable (I used cauliflower, carrot, snow peas & peppers)
- 1 Tsp salt
- 2 Cups coconut milk
- 1 and 1/2 Cups water
- 1 Tsp garam masala
- 1/2 cup cilantro (chopped)
Note
Add an extra tsp of chili flakes for a hot shrimp pilaf
Directions
Saute onion in oil. Add cumin, turmeric, chili flakes and ginger garlic paste and cook for 2-3 minutes. Add shredded coconut and cook one minute | |
Add shrimp and cook for 3-5 minutes. Add vegetable and saute 1 minute. | |
Add 2 cups coconut milk and 1 and 1/2 cups water and cook. Once the water boils, add rice, salt and cook covered for 10 minutes. | |
Mix well after 10 minutes, add cilantro, garam masala and cook covered for another 10 minutes, till rice is flaky and cooked. Cook uncovered for 2-3 minutes. |
