My Sunday Supper team is having a virtual Labor Day celebration and I am bringing my avocado deviled eggs . I love Labor Day which is a tribute to people who works and everyone… right from the mom at home to the CEO of the Food Network work huh so celebration for all! Back to the recipe: Adding roasted garlic to avocado gives it a rustic touch and a smokey flavor. Roasting brings out the flavor in everything and garlic is no exception. You can use an oven to roast garlic or just roast stove top like I did in this recipe. It was super simple and tasted great. Not to mention heart healthy !! Oh yeah!! Eggs are packed with protein power and when you take out the yolk and replace with avocado, even your friends and family who have high cholesterol can eat this side guilt free! I love eggs in any form and these avocado deviled eggs are a hot favorite! I also love avocado in any form so the two together are BIG WIN indeed! To make this recipe super easy, just use store bought guacamole and add some roasted garlic to it! Enjoy !!
Just a note to all my loyal readers who hung in there and even sent me messages to ask me if I was ok since I hadn’t blogged in *gasp* a month !! It’s been super crazy , summer with kids home and some other challenges I was facing so I just took a small blogcation. Tip to peel eggs effortlessly : Put a tsp of salt as you boil the eggs. The PH of the water changes and the shell just peels off nice and smooth ! Works every time 😉 !!
Avocado Deviled Eggs
Ingredients
- 2 avocados (ripe)
- 6 eggs
- 1/2 Tsp salt
- 1/2 Tsp pepper
- 2 Pods garlic
- 1/2 Tsp chili flakes
Directions
Boil eggs, peel and halve. | |
Roast garlic in the skillet by dry roasting it with skin for 4-6 minutes till skin turns brown/black. Scoop out the inside. | |
Scoop out avocado flesh. Add salt, pepper, chili flakes, roasted garlic and mix well. | |
Stuff eggs! |
