Turkey shepherd’s pie with a creamy cauliflower crust is pure comfort food! It’s easy to put together and thus a familiar favorite in my home on a busy weeknight. It’s also a one pot meal which makes it a huge win for a weekday meal. I cook the turkey with loads of veggies, layer it with creamy cauliflower mash and I have meat and veggies rolled into one. Just pair it with some fruit and fresh juice or milk and dinner is ready! I love the lightness of the cauliflower crust and seriously making cauliflower mash is much easier than making potato mash. No peeling !!! Just steam the cauliflower, mash it with some salt, pepper and some almond milk and I have creamy cauliflower mash which tastes great when layered over my ground turkey. I spiced the turkey with pepper, garlic, cumin and chili flakes to give it a little kick. The combination of spiced turkey with creamy cauliflower is so good! I used some ground flaxseed to bind the turkey mixture together and it adds a nutty flavor to the meat. Not to mention a burst of healthy fat and fiber. Finally I added some fresh cilantro and mint to give it a fresh taste. Low Carb, Gluten-Free and Perfectly Paleo Turkey Shepherd’s Pie for a quick weekday supper!

Creamy cauliflower mash!
Turkey Shepherds Pie With Cauliflower Crust
Ingredients
- 1lb ground turkey
- 1 Tbsp olive oil
- 2 Tsp pepper (divided)
- 1 Tsp chili flakes
- 4 Pods garlic (crushed)
- 1 Tsp cumin
- 1/2 cup peppers (diced)
- 1 onion (diced)
- 1/2 cup peas
- 1 cup carrots (diced)
- 1 cup squash (diced)
- 1 Tbsp flaxseed (ground)
- 1/2 cup almond milk
- 2 Tbsp fresh mint
- 2 Tbsp fresh cilantro
cut into pieces
- 32 Ounces cauliflower (or 1 large)
Note
Use 2 -3 cups of frozen veggies for a quick fix pie!
Directions
Heat oil. Add diced onion and saute 2 minutes. Add peppers, garlic, cumin, chili flakes and cook another minute. Add ground turkey, salt and cook about 3 minutes. Add carrots, squash, peas, 1 tsp pepper, 1 tsp salt and cook about ten minutes till mixture is dry. Add flax seed, mint and cilantro. | |
Meantime steam or microwave cauliflower florets till cooked ( about 10 minutes) Mash with 1 tsp pepper, 1 tsp salt and alomnd milk till you get chunky cauliflower mash. | |
Line a pie plate with firmly packed turkey mixture. Add a layer of cauliflower mash on top. Sprinkle with coarsely ground flax and bake at 350 degrees for 45 minutes till crust gets golden brown. |

Yes, as a vegetarian, I also try to add flax seed to as many dishes as appropriate for the omegas.
