Lemonade slushy laced with pineapple and coconut water makes a cool summer treat. All natural lemonade slushy made with fresh lemon juice. My Sunday Supper team is doing a “recipes inspired by music ‘theme and I thought I would make my pineapple lemonade slushy inspired by an oldie “Lemon Tree” by Peter Paul and Mary. Well, in the song they say the poor lemon is impossible to eat but the incomparable lemon is one of the most used fruits in the cooking industry. When lemon is added to other ingredients it has the power to transform anything . Anyway, I loved the song growing up so pineapple lemonade slushy it is. I actually froze some ripe pineapple a few weeks back and used it in this lemonade slushy. I added some coconut water which made it super healthy and hydrating. My kids loved it and I was glad to be giving them healthy lemonade slushy instead of the red, blue green ones in the convenience store. Super cool hydrating healthy pineapple lemonade slushy!

Ingredients
- 12oz frozen pineapple
- 1/2 cup fresh lemon juice (or juice from 2 lemons)
- 1 cup coconut water (I used vita coco)
- 2 Tsp brown sugar or honey
- 2 Cups ice cubes
Note
If using fresh pineapple freeze pineapple chunks before making the slushy.

That looks very refreshing and give me an idea to make with coconut water. I’ve been drinking Vita Coco for a while and this is absolutely another option than just having plain coconut water.

This is like the best lemonade slushy! I never used coconut water, but it sounds just perfect with the pineapple and to give it that summery feeling!
A perfect summer cocktail! I almost went with a lemon dish too taking the lead from Led Zeppelin’s The Lemon Song but ultimately went another direction.
