Delicate light flour-less coconut cookies with cranberries, walnuts and just a hint of coconut oil??!! Yummy coconut cookies that are healthy to boot. My Sunday Supper team is hosting a virtual “cookie swap”! I can’t wait to visit their blogs and grab some ideas especially since I am not a very seasoned cookie maker. Well! I do bake the odd cookie here and there but it’s the usual good ole oatmeal-raisin kind. For this cookie swap I decided to create a light coconut cookie with walnuts and cranberries. This may not be my prettiest cookie yet, but it sure is my yummiest! Seriously, the flavor of fragrant coconut, tart cranberries and crunchy walnuts with just a hint of honey makes it a “melt in mouth” coconut cookie! Since it is flour -less it’s very delicate and so much easier to bake in a mini cupcake liner. Plus it is so easy to make it, you don’t need a recipe card. Seriously! Just microwave coconut oil, honey together, then mix with ingredients, toss into cupcake liner and bake for 10 minutes. Easy or not? The result is a fabulous delicate crispy, crunchy cookie. Added bonus, this cookie is vegan and gluten-free. Not to mention the perfect paleo cookie and you don’t have to be vegan, gluten-free or paleo to make this super simple treat. I may swap the cranberry for pineapple and try a tropical coconut cookie!! For now, munch on!!
Nutrition Wise
Coconut is full of healthy fat that gets burnt as fuel instead of getting stored in the body. It boosts the immune system and has so much flavor. Cranberries contain a powerful blend of protective phytonutrients (plant chemicals) in the form of flavonoids and phenolic acids that contain protective, disease-preventing properties . Also high in Vitamin C. Walnuts are a powerhouse of healthy fats and omega 3 !! Quite a healthy bite in this tiny cookie!
Coconut Cranberry Honey Nut Cookies

Ingredients
- 1 cup coconut flakes (unsweetened)
- 1 Cup Dried cranberries
- 1 cup walnuts (chopped)
- 2 Tbsp honey
- 2 Tbsp coconut oil
Note
You can use sweetened coconut flakes if you prefer. It will just be a sweeter cookie.
Directions
Melt honey and coconut oil for a minute in the microwave. | |
Chop walnuts. Mix nuts with cranberries and coconut. Gently mix in melted oil and honey. | |
Drop spoonfuls into mini baking cups and bake for 10 minutes at 360 degrees. |

I love these cookies for so many reasons! I just started cooking with coconut oil, though I’ve yet to bake with it, so now I can! Also, my brother in law sticks to a paleo diet, so I can make these for him (and sneak a few for myself 😉 so he doesn’t have to feel guilty about eating Christmas cookies this year! I may swap out walnuts for pistachios because they’re his favorite and they’re festive for the season!
