An extra light apple crisp with dates and a crisp coconut topping which is yummy and melt in mouth delish ! This crisp is so simple and easy to make, I can’t even call it a recipe 🙂 ! Seriously, it takes minutes to put together but the end result is an exquisite light guilt free dessert that tastes heavenly ! Cut up apples and dates, toss with some cinnamon, lemon juice, brown sugar, top with coconut and bake ! That’s it ! Easy or not ? Since there is no crust involved, this apple crisp is a paleo friendly dessert. Added bonus, it is also vegan and gluten-free. The apples bake soft while the coconut layer bakes nice and crisp and it makes a light crunchy treat. Whenever I crave something sweet, I bake this. Healthy right ! The crisp has just a bit of brown sugar which you can omit if you like or substitute with coconut sugar . Coconut sugar has a lower glycemic index (GI) than other sugars. I sometimes use just apples but I find it tastes better with other fruits thrown in. Add some raisins, apricots or cranberries if you wish and dress up a plain apple crisp from nice to wow !! I’ve tried it with all the three fruit combinations and it tastes great, but my favorite combination is with dates ! Yummy ! Since apples are always around on my dinning table, a light apple crisp is always easy to make and since it’s a light version, so much easier on the waistline too 🙂 !

The antioxidants in apple have health promoting and disease prevention properties; thus truly justifying the adage, “an apple a day keeps the doctor away.” Apples are packed with the goodness of pectin, a fiber which helps prevent absorption of dietary-LDL or bad cholesterol in the gut. Apples are rich in antioxidant phyto-nutrients, flavonoids and polyphenolics. Dates are a powerhouse for iron and fiber while coconut adds a healthy dose of mono unsaturated fat which get burnt as fuel.

- 8 dates (chopped)
