Chicken nuggets for kids ? Not in my home ! Chunky chicken nuggets spiked with cumin, sea salt, pepper, garlic powder and curicumin are a family favorite that every one in my home eats. Coat these in some cornflour and flax meal and you can bake or fry these nuggets. I usually bake them, but if my kids are in a hurry to eat them, I fry them. Making chicken nuggets at home is easy and ensures the nuggets are actually made from real food, and the outcome is WAY better than the processed chicken nuggets that contain more bread filling than meat. Well, most brands anyway. It’s also a good way to introduce flavors and spices to your kids. Add a little brown sugar if you want a sweet and spicy flavor. Just toss the chicken in the spices, add some egg white, some corn flour and flax meal ! Simple and healthy! They freeze really well, so make some extra and store for future use. Eliminating bread crumbs make them gluten-free and the corn flour, flax meal mix give it more flavor.

Good protein power with a touch of antioxidant power courtesy of the spices. The flax give it some healthy fiber, lignans and omega -3 ! I love flax and use it in so many dishes !

Ingredients
- 2lb boneless chicken (cut into small chunks)
- 1 egg (or 1/ 2 cup egg white)
- 2 tablespoons corn flour
- 1 tablespoon flax meal (flax seed ground )
- 1/2 teaspoon cumin powder
- 1/2 teaspoon curicumin (or turmeric)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Note
These chunky chicken nuggets give you a boost of protein power without the fillers ! Had a slightly spicy kick to it. Tone down the spice if your kids don't like spice.
Directions
Cut chicken into small chunks. | |
Mix 2 tablespoon corn flour with 1 tablespoon flax meal. ( make flax meal by griniding 1 & 1/2 tbsp raw flaxseed.. | |
Make a spice mix of cumin, curicumin, salt, pepper garlic powder and smear over chicken. | |
Add one egg or 1/2 cup egg white and the flax cornflour mixture to the spiced chicken and mix well. | |
Bake at 350 for 30 - 40 minutes till baked brown. Turn halfway through baking. If frying, drain on a paper towel after frying.. |

Yep ! Packed with antioxidants and lotsa good stuff. I try to sneak it into any dish I think will taste better with it. Kinda strong flavor so can’t use it in everything like my smoothies 🙂
