My Sunday Supper team is doing another round of favorite recipes from “100 recipes every mom should have‘ by Katie Workman ! I had the book for the past month and have been using it a lot. So many lovely recipes that you can customize to suit your need. When I flipped through the book the corn spinach with scallions and bacon caught my eye. Just the colors made me want to literally eat the dish off the book ! I love eye appeal in a dish and with my “fussy with veggies ” family eye appeal is important. I made some changes to the dish. I used all the vegetables that Katie used and added some edamame to it to give it some protein. I also added some cilantro and orange cherry tomatoes from my garden. They fit right in. I also added some cumin and it complemented the pepper to give a subtle peppery spicy taste. Well the dish was a hit and was all gone. I’m quite sure this is going to be frequent dish in my home ! You can skip the bacon if you want a veggie/ vegan dish. If you do eat bacon, add it ! It adds so much “oomph” to the meal.

Bursting with fiber, vitamins and minerals this dish has protein courtesy of the edamame. A nice dish to incorporate for meatless meals. Not counting the bacon of course.

Skillet Spinach Corn with Edamame & Bacon Bits

Ingredients
- 2 cups fresh or frozen corn
- 2 cups edamame
- 4 cups spinach
- 1 bunch scallion
- 1 red pepper (chopped)
- 1/2 cup cilantro (chopped)
- 1 cup cherry tomatoes
- 4 pieces bacon
- 1 teaspoon kosher salt
- 2 teaspoons fresh pepper (coarsely ground)
- 1 teaspoon cumin
Note
Skip the bacon to make this a veggie or vegan dish
Directions
Cook bacon in skillet turning till browned | |
Put oil in skillet and saute scallions till soft | |
Add corn, edamame, red pepper, salt, pepper cumin and saute till corn and edmame turn soft ( about 5 minutes) | |
Add cilantro, tomatoes and saute about 1 minute | |
Crumble bacon into dish | |
Add spinach one bunch at a time and stir until spinach leaves have wilted, about 1 minute |

because of my dislike to bacon, I prefer to have this with some chicken fillet as the meat for this recipe, and the taste is still yummy to me 🙂
