It’s hot these days. Here in DC, we’ve been hitting the 100 degrees mark and over! So when my #Sunday Supper team decided on a “Beat the Heat” theme I gladly jumped on the bandwagon! Jen from Juanita’s Cocina is hosting it this week and she has a really cool blog with lots of fab recipes. So many foods cool me down but I think fruit takes the cake when it comes to beating the heat. Fruit is the most hydrating food ( apart from water) on the planet. Cool, fresh fruit laced with lime, chili, paprika, sea salt and just a hint of ginger, scream “eat me “!!! Not only is this a cool dish, it is also loaded with nutrients like fiber, antioxidants, minerals and vitamins with a perfect “pick me up” any time. This fruit salad is so versatile it can be served many ways. Chop it a bit and serve with chips as a fruit salsa. Toss some spinach or green leaves in and you have a tangy, fruity salad. Top it with some whipped cream and you have dessert or just eat it plain. I happened to be detoxing this week, so I made a big batch and indulged all weekend. It made my detox so much more interesting 🙂 You can use any fruit you have lying around. Just make sure you add some citrus. The combo of citrus and chili is heady and perfect for a hot summer day. Enjoy!!!

Sweet & Tangy Chili Lime Fruit Salad

Ingredients
- 2 cups Mango (cubed)
- 1 cup Blueberries
- 2 cups Strawberries (Sliced)
- 2 cups Pink Grapefruit
- 1 cup Cherries (Pitted and halved)
- 2 cups Kiwi (Peeled & sliced)
- 1 teaspoon Paprika
- 1/2 teaspoon Chili
- 1 lemon (juiced)
- 1 tablespoon Ginger (grated)
- 1/2 cup Mint
- 1 teaspoon Sea salt
Directions
Pitt Cherries and halve, Peel kiwi and slice, Peel grapefruit and separate flesh, Chop strawberries and mango. | |
Mix together paprika , chili, sea salt , and toss into fruit. | |
Juice 1 lime and add grated ginger and toss into fruit mixture. | |
Toss with mint leaves and refrigerate for an hour to let the flavors mingle. |
