I just realized when a friend reminded me, that I was halfway done with the A -Z Blogging Challenge ! Yay ! I am now blogging M which means I have blogged half the alphabet. M is for my favorite fruit Mango. It conjures up memories of sitting on the porch in my Grandma’s home in India eating mangoes from the tree. There were two mango trees in the yard and the fruit was super sweet. My sister and I would visit grandma’s home very summer and had our fair share of that luscious juicy fruit. Well, no mango trees here 🙁 but, I buy them frozen or fresh and mangoes are a favorite when it comes to making smoothies. Just plain mangoes with a touch of ginger and lemon makes a delish smoothie. I sometimes add them to yogurt to get a yummy probiotic friendly treat. This time I thought I would try adding some mango to my traditional non alcoholic pina colada. It turned out super yummy ! Mango combined with pineapple and coconut milk make a tangy creamy sweet drink. This recipe is also dairy free ! I used the silk low-fat coconut milk , but you can use any kind of coconut milk.
Mango Magic : Mangoes are loaded with Vitamin A , Vitamin C, Vitamin B6, Potassium, Copper and phytochemicals including Lutein. They are high in fiber, virtually fat-free and contain high levels of beta-carotene which may help slow the aging process and reduce the risk of certain forms of cancer.
