Day five of the A- Z blogging challenge and am blogging the letter E. Well, am actually am two day behind, but plan to catch up on the weekend. The exotic, bright, purple luscious eggplant is one of mt favorite veggies. Whether you grill it, sauté it, roast it or blend into a delish dip it’s always a winner. This recipe involves roasting eggplant slices and then smearing it with a tangy sweet sour sauce which makes it a melt in mouth dish. It is delish ! Try it and see if your family doesn’t ask for more.
Nutrition Nuts and bolts :
Purple eggplant is bursting with the antioxidant power of anthocyanina and fiber. Eggplants also have good antioxidant content. Nasunin, a powerful antioxidant helps protect lipids surrounding brain cells from damage. It also works to hunt down and neutralize free radicals in the body, which helps fight against various forms of cancer. Nasunin is found in the skin of eggplants. n

I love eggplant, too! We grow it in our garden and I think it's one of the most beautiful pieces of produce! Have you tried some of the exotic varieties? They're fun, too. And delish. The Engineer makes some wonderful ratatouille with it.
