Haven’t blogged in so long …think I may have serious blogger’s block..anyway breaking the block now.
Since I just returned from a glorious, month long family vacation from the ” land of Spice and Curry” seems like blogging something spicy would make sense, so am going to share one of my favorite ” Rice Recipes. I am not a big fan of rice in general because I think, too much of it contributes to ” belly fat”, but treat it as a side dish and it’s fine. This recipe however, I consider one of the healthier “Rice Recipes” It has a lower Glycemic Index (GI) than most rice dishes, GI is a measure of the effects of carbohydrates on blood sugar levels.The rate at which any food hits your blood sugar level, an invaluable tool for diabetics, folks who want to keep their weight under control and people who want to live a healthy lifestyle, because everything is connected to the rate at which a food hits your blood sugar levels. Reasons why this rice dish is ” lower GI” than most :

First, I used Basmati rice which had the lowest GI of all types of rice. General rule of thumb- if a type of rice needs a lot of water to cook it or takes a long time to cook, it probably has a high GI, if this makes sense. Next The addition of lemon to the rice significantly lowers the GI. Something magical about lemon, lowers the GI of any dish it is added to. Then I also added peanuts which further lowers the GI of the rice dish. so with all these additions to RICE , you have a lower GI rice .Added bonus – heart healthy Olive oil and the antioxidant power of curicumin add to the flavor and Nutrition of the dish. Other benefits are : since the rice has lemon in it, would make a reasonably safe ‘picnic dish’ for your cookout or barbecue picnic. You can also make a batch of the lemon mixture and refrigerate so you can use as required whenever you have leftover cooked rice. ENJOY !!
